Settings → Mail → Privacy Protection → Protect Mail Activity. Apple proxy pre-loads all email images on Apple\'s servers, then forwards to you. Sender sees Apple\'s IP, not yours. Sender sees email opened immediately (whether you actually read it or not) — making open data meaningless.
